Refreshing No Bake Cherry Cheesecake

We've found another perfect coffee and cake combo for you to enjoy. 

We just can't get enough of this refreshing cherry cheesecake and had to share the recipe with you guys. It's quick to prepare and requires no baking! Just pop it in the fridge to chill and you'll have the perfect cherry cheesecake when ever you fancy a sweet snack - warning: it won't be around for long.

We paired this with a delicious latte made with Caffé Prima Roma Coffee Beans, a medium roast with a slightly sweet flavouring; topped off with a swirl of caramel sauce.

For the base
100g digestive biscuit crumbs
50g butter or margarine, softened
50g caster sugar (optional)
For the filling
225g cream cheese
125g icing sugar
1 tsp vanilla extract
250ml double cream, whipped
Simply Cherry Sauce

How to make cherry cheesecake

Mix together digestive biscuit crumbs, butter and sugar (optional) in a bowl. Press into a cheesecake tin or dish, make sure to push into the sides as much as possible.

In a seperate bowl beat the cream cheese, sugar and vanilla together until smooth. Whisk the whipped cream into the mixture again until smooth. Pour the mixture on top of the biscuit base.

Smooth the top with a spatula and refrigerate until firm, this takes around 2 to 3 hours. Spread the Simply Cherry Sauce on the top and chill until serving. Why not try topping off with whipped cream?
